Cobbler is a delicious dessert


1 stick butter, melted
1 cup all-purpose flour
1 cup sugar
1 cup milk
1 can (20 oz.) sliced peaches (with heavy syrup)
1 tablespoon baking powder
1/2 teaspoon salt
A little extra sugar to sprinkle on the top before baking

In a bowl, mix flour, sugar, baking powder, milk and salt. Add butter to casserole dish and pour mixture into dish. Place peaches on top and bake for 30 to 40 minutes at 350 degrees.


1-1/4 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 large egg, lightly beaten
1-1/4 cups buttermilk
3 tablespoons vegetable oil
1 cup chopped pecans, toasted (optional)

Stir together first 5 ingredients in a large bowl; make a well in the center of mixture. Stir together egg, buttermilk and oil; add to dry ingredients, stirring just until moistened. Add pecans, if desired.

For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle.

Cook pancakes until tops are covered with bubbles and edges look cooked; turn and cook other side. Serve with butter, warm maple syrup and fresh berries.

Yield: 9 (4-inch) pancakes.


8 eggs, stirred
1/2 tsp. salt
1/2 tsp. black pepper
2 cups spinach
4 scallions
1/4 cup feta cheese
2 tsp. vegetable oil
1/2 cup ham, chopped (optional)

Combine eggs, salt and pepper. Add remaining ingredients and pour into 10-inch iron skillet. Bake at 350 degrees for 30 minutes.
